Health Benefits
Sunflower seeds are especially high in vitamin E and selenium. These function as antioxidants to protect your body’s cells against free radical damage, which plays a role in several chronic diseases. While sunflower seeds are pretty high in fat for a one-ounce serving, they are made of mostly mono- and polyunsaturated fats, which are a great anti-inflammatory and heart-healthy source of fats our bodies need. Additionally, they are a good source of fiber and protein, adding a nice nutrition boost to your favorite granola bars, salads and other recipes.
Fun Facts
The World's tallest sunflower reaches 30 feet and 1 inch. Once the flower heads are empty of seeds, they can be converting into disposable scrubbing pads for jobs too tough for your cleaning tool.
How to Store and Select
Sunflower seeds can be found in either shelled or unshelled varieties, look for the kinds that are uniform in color without any major yellow spots, firm and plump and avoid thin, broken or shriveled seeds. Store whole unshelled kernels in an airtight container in a cool, dry place but preferably in the refrigerator for up to three months and store shelled seeds for up to one year.
