Fun Facts
White chocolate originates from the cocoa (cacao) plant, but it is technically not “chocolate.” According to the FDA, in order to be classified as ‘chocolate’ a product must contain chocolate liquor, which is what gives the bitter intense chocolate flavor (and color) to dark and milk chocolates. September 22nd is National White Chocolate Day. The Aztecs valued the cacao bean so much that they used it as currency during the height of their civilization. Chocolate is the only edible substance to melt around 93° F, which is just below the human body temperature. This explains why chocolate melts so easily on your tongue.
How to Store and Select
Storing this item correctly is important to ensure maximum freshness and taste. Whether you buy this heart-healthy snack in a 1-pound bag or in bulk they can become rancid rapidly if not stored properly. Heat exposure will cause the oils in nuts to go bad, resulting in rancid nuts. Store your nuts in the fridge or freezer (away from onions and other strong-smelling foods), this limits the exposure to light, oxygen and heat. Use containers with air-tight seals, a glass jar or plastic containers are a good option to maintain proper moisture levels. Label the products you store with dates so you know which ones to indulge in first. Make sure to let cold nuts warm up to room temperature before opening the bag. This prevents the nuts from absorbing excess moisture. If you are planning on eating and finishing the bag within a few days just storing them in an air-tight container will be sufficient.
