Ingredients Brown Sugar Cashew Brittle

  • 1 cup sugar, dark brown
  • White sugar, 1 cup
  • Light corn syrup, 1 cup
  • 1/4 cup of butter and 1/2 cup of water
  • Salted, roasted cashews in 2.5 cups
  • 1.5 tsp of sifted baking soda
  • 1 teaspoon vanilla essence plus more butter for coating

Steps Brown Sugar Cashew Brittle

  • First, the oven should be heated to 250 degrees Fahrenheit. 
  • Use parchment paper to cover a baking sheet.
  • To prevent the brittle from sticking, butter the parchment paper. Spread Cooking spray over the forks and/or silicone spatulas.
  • On a second baking sheet, spread the cashews and bake them in the oven as directed. (Warming the nuts will prevent them from settling too quickly when added to the candy mixture.)
  • Butter the sides of a 3-quart saucepan to prepare it. In a saucepan, mix the sugars, corn syrup, water, and ¼ cup of butter. 
  • Stir continuously while the mixture is heated to a boil, and reset the heat to a medium-low setting. 
  • Maintaining a boil all through the process, cook the candy until a candy thermometer registers 275 degrees Fahrenheit. To prevent burning the mixture, adjust the heat as needed. The duration of this action should be 30 minutes.
  • After taking the cashews out of the oven, carefully combine them with the vanilla extract. 
  • Until a candy thermometer registers 295 degrees Fahrenheit, continue to simmer, stirring constantly (to prevent burning the nuts). It should take 15 to 20 minutes to complete this phase.
  • Eliminate heat. 
  • As you keep stirring, add the baking soda and Pour immediately onto a baking sheet covered with paper, spreading with forks or spatulas that have been pre-prepared as thinly as possible.
  • Before slicing it into small pieces, allow the baking sheet to cool fully.
