Recipe: Ginger-Peach Muffin

Are you a lover of muffins? This ginger-infused muffin recipe is an excellent choice  for breakfast. This Ginger-peach muffin is refreshing, sweet, incredibly flavorful, and moist. Let’s make them together! 

Ingredients

  • One teaspoon of baking soda
  • 3 cups of Wheat Flour
  • One full cup of coconut sugar
  • ½ tablespoon of baking powder
  • Two thoroughly beaten eggs 
  • One teaspoon of sea salt
  • ½ cup of melted butter
  • ¼ cup of freshly grated ginger slices
  • ⅓ cup of peach preserves for a peachy taste 
  • ½ tablespoon of vanilla extract for taste
  • 1 ½ cups of buttermilk

Directions 

  1. First, make sure you preheat your oven to a temperature of 350° 
  2. Combine the wheat flour, salt, baking soda, and baking powder in a bowl and mix thoroughly 
  3. Get a clean mixing bowl, and add the fresh ginger, coconut sugar, butter, beaten eggs, buttermilk,  and vanilla extract. Make sure to mix until they blend well
  4. Pour the first mixture of flour, salt, and so on into the second mixture and mix until an overall consistency is reached. 
  5. Prepare your muffin cups and fill each till halfway. 
  6. Create a small hole in each muffin cup (already with the batter) and add spoons of peach preserves until each gets almost full. 
  7. Place in the preheated oven and bake for the next 18 to 20 minutes
  8. Enjoy with a glass of desired drink.
