Recipe: Almond Cookies

Congratulations! This almond cookie recipe may be what you need if you have been looking for a simple and quick snack to serve your friends and family this Christmas season. This is an eggless almond cookie recipe. 


For Cookies:

  • 1 cup soft yet cold unsalted butter 
  • 3/4 cup of sugar
  • Almond essence, 1 teaspoon
  • 2 cups of general-purpose flour
  • A half-teaspoon of baking powder
  • ¼  teaspoon of salt
  • Some almond slices 

For the Glaze:

  • Sugar, 1 cup, (powdered)
  • 2 teaspoons of almond extract
  • 2  tablespoons of water


  1. Put parchment paper on the baking sheets and preheat the oven to 400° F
  2. Whip the butter, sugar, and almond flavor together in a sizable basin using an electric mixer. 
  3. Mix the dry ingredients—flour, baking powder, and salt—in a separate basin.
  4. Add the flour mixture, 2 Tablespoons at a time, stirring thoroughly after each addition (very essential!!).
  5. Make little 1-inch balls of cookie dough, flattening each one slightly. They need to resemble a dense checkerboard.
  6. On a pan with parchment paper, cook for 7 minutes at 400 degrees (they won’t seem done)
  7. Place almond slices on top of each cookie after cooling it to just the right temperature

For the glaze:

  • Mix the powdered sugar, almond extract, and water to make the glaze.
  • Now put a dab of glaze on top of the cookie and almonds.
