Ingredients
- Whole fat coconut milk (½ cup)
- Salt (½ teaspoon)
- Cinnamon (1 pinch)
- Garlic powder (¼ teaspoon)
- Vegetable broth (4 cups)
- Olive oil (2 tablespoons)
- Peeled and minced ginger root (1 ½ tablespoon)
- Chopped carrots (4 cups for 1 ¾ pound)
- Yellow onion (1)
Method
Chop the carrots after peeling them and dice the onions. Mince the ginger after peeling, then bring out a large pot where you’ll pour the olive oil and heat up using medium-high heat.
Put in the onion and allow to sauté for 5 minutes. Then put in the salt, cinnamon, garlic powder, vegetable broth, carrots, and ginger. Stir and allow it to boil and simmer till the carrots turn tender. It usually takes about 15-20 minutes.
Pour the hot soup into a blender with the aid of a spoon. Pour in the coconut milk and blend to a smooth state. Add some more seasoning if needed and allow to heat up for about 2 minutes before putting out the heat. You can swirl while you serve, adding fresh cilantro and a little coconut milk.
