Keto Peanut Butter Chicken is a perfect mix of slight spiciness and sweetness. Takes about 10-15 minutes to prepare.

Ingredients Keto Peanut Butter Chicken

  •  1 teaspoon each of ground cumin and ground coriander
  • 16 ounces of skinless and boneless chicken thighs cut into 1-inch-long chunks 
  •  3 divided tablespoons of soy sauce
  • 1 chopped red bell pepper
  • Chicken broth, one cup
  • Two tablespoons of Citrus juice
  • 1/4 cup freshly chopped cilantro
  • (3) cloves minced garlic, finely
  • 1 teaspoon fresh ginger minced
  • 3 ounces of finely minced onion
  • Natural peanut butter, 1/2 cup
  • Red curry paste, two tablespoons.

Instructions Keto Peanut Butter Chicken

  1. In a small bowl, thoroughly combine the ground cumin and coriander.
  2. Next, over medium-high heat, preheat a large skillet.
  3. Now, add the cubed chicken thighs to the skillet and top with 1.5 tablespoons soy sauce and 1 teaspoon of the spice mixture.
  4. Cook chicken for 5 minutes, then stirs in the minced garlic and red bell pepper. 
  5. You can cook for an additional 5 minutes, or until the chicken is thoroughly cooked; then set aside.
  6. Place back the skillet on the stovetop and keep it heating on medium.
  7. Stir in the natural peanut butter, red curry paste, 1.5 tablespoons soy sauce, the remaining 1 teaspoon of the spice mixture, and chicken stock.
  8. For another 5 to 10 minutes, add the chicken, onion, and bell pepper to the sauce; until the sauce is rich and completely covers the chicken.
  9. Finally, add the lime juice and cilantro, then turn the heat off.
