Ingredients Berry Chocolate Cream Cup

  • 1 can (400 ml) full-fat coconut milk
  •  ½  teaspoon of vanilla essence
  • ⅓ cup of semisweet tiny chocolate chips
  •  ½ cup of fresh blueberries 
  • Fresh raspberries, ½ cup

Directions Berry Chocolate Cream Cup

  • Leave the lid off of a can of full-fat coconut milk in the refrigerator overnight. As it thickens, the coconut milk will get separated from its water.
  • In a double boiler set over boiling water, slowly melt the chocolate chunks. Combine your chocolate with a little coconut oil if it is overly thick.
  • Each candy cup should have a thin layer of chocolate on the bottom and sides. You can use a candy cup in any design or size. (Although paper or foil cups will also work, the silicone version is preferable since it is more durable.
  • Until the chocolate is solid, freeze the cups. After the chocolate has been set, carefully remove the candy mold from it.
  • Continue making the chocolate cups after putting them back in the freezer.
  • Make the coconut whipped cream while keeping the chocolate cups in the freezer. Scoop the firm coconut cream that has formed on top of the coconut milk can and set it in a bowl after removing the can from the refrigerator.
  • With a hand mixer, beat the coconut till frothy, and then add the vanilla essence.
  • Each chocolate cup was filled using a piping bag fitted with a star nozzle. (As an alternative, you could take a Ziploc bag and make a tiny cut in one of the corners, or you could just use a spoon to fill your cups).
  • Add fresh blueberries, raspberries, and mint sprigs to each cup as a garnish.
