Raisins Date Walnut Muffins Recipe

Walnut Muffins include raisins and dates. They make a perfect breakfast and snack. Easy to make and delicious to share with your loved ones! 

Ingredients Walnut Muffins

  • Chopped dates (125g)
  • Raisins (125g)
  • Walnuts (125g)
  • Melted coconut oil (125g)
  • Egg (1)
  • Maple syrup (50g)
  • Milk (250g)
  • Baking soda (½ teaspoon)
  • Salt (½ teaspoon)
  • Cinnamon (1 teaspoon)
  • Baking powder (1 tablespoon)
  • Old fashioned oats (250g)
  • Flour (500g)
  • Demerara sugar (200g)

Method Walnut Muffins

  • Set the oven to 375 degrees Fahrenheit and bring out your medium size mixing bowl. 
  • Put in all the dried ingredients, then whisk well for a perfect combination. 
  • Set a small mixing bowl or a big measuring cup and add the coconut oil, egg, maple syrup, and milk, then stir.
  • Next, put the dry and wet ingredients together, stirring well till it all blends perfectly. 
  • Ensure the flour mixes well with no visible streaks. Then put in the dates, raisins, and walnuts and stir. 
  • Set your muffin pan next, then grease. 
  • Add the mixture evenly into the 12 wells of the pan and add some brown sugar on top if you wish. 
  • Put the muffin pan in the oven to bake until the tops turn brown, which usually takes about 20 minutes.
  • Afterward, remove the muffin pan from the oven and allow it to cool off for about 5 minutes before removing them. 
  • You can eat them warm with butter or let them cool off completely.
