Fresh Cherry Cake – 1 Recipe

Cherry cake is easy to make from the convenience of your own kitchen. Some would argue that homemade cakes are the best! And we agree! If you are looking for a homemade cake this fresh cherry cake recipe is the one to try out. 

Ingredients Cherry Cake

  • Sugar (1 tablespoon)
  • Milk (¼ cup)
  • Yogurt (½ cup)
  • Vegetable oil (¼ cup)
  • Vanilla (1 teaspoon)
  • Lemon zest (½ )
  • Sugar (80 grams)
  • Egg and egg yolk (1 each)
  • Baking soda (¼ teaspoon)
  • Baking powder (1 ½ teaspoons)
  • Flour (180 grams)
  • Fresh cherries (2 cups)

Topping Cherry Cake

  • Whipped cream (1-2 cups)
  • Whole cherries (10-12)
  • Melted chocolate (2-3 ounces)

Method Cherry Cake

Get out your 8-inch springform or cake pan and grease while you allow the oven to preheat to 180 degrees Celsius. Put the baking soda, powder, and flour in a medium bowl and whisk well. 

Put the sugar and eggs in a large bowl and beat well with medium speed until it turns fluffy and light. It usually takes about 2-3 minutes to complete. Next, put in the vanilla and lemon zest, then beat for a minute.

Afterward, put the vegetable oil slowly and keep beating. Pour the milk and yogurt into the mixture and slowly combine. Next, put ⅓ of the flour at a time and keep beating at a low speed. While you add the flour slowly, beat slowly, and after each ⅓ addition, scrape the bowl. Keep beating until the mixture is smooth. 

Bring out the pitted cherries and fold half of them. Then put them into the cake pan you initially prepared. Add the other cherries, then use a spatula to press down. Scatter a tablespoon of granulated sugar and put it in the oven to allow it to bake for about 45 minutes. 

Before you serve the cake, sprinkle a little bit of chocolate-dipped cherries, whipped cream, and powdered sugar if you wish, then serve with any drink of your choice.
