Ingredients

  • Chicken broth
  • Brown sugar
  • White wine vinegar
  • Celery
  • Yellow onion
  • Lemon
  • Fresh Rosemary
  • Sweet paprika
  • Fresh garlic
  • Extra virgin olive oil
  • Chicken (Bone-in, skin-on)
  • Fresh cranberries

Method

Put the vinegar, brown sugar, and berries in a pot, then allow to cook for about 10 minutes as the chicken prepares in the oven. It will enable their tough skin to break easily. Ensure you put the seasoning on the chicken right after, then allow it to marinate.

After, you can rub the garlic beneath the skin of the chicken to add extra flavor to it. Rub the paprika, rosemary, pepper, and salt on the entire chicken, even underneath the skin. Pour lemon juice, white wine vinegar, and extra virgin olive oil into a deep dish or large bowl.

Next, put the onions, celery, and seasoned chicken before you allow them to marinate. Put the chicken pieces in a skillet, then brown them with extra virgin olive oil. If the chicken gets some crust before you bake, the juices will seal in better, making the chicken pieces moist and extra delicious.

Bake the chicken, then add some lemon halves, onions, and celery into the baking dish with the chicken. Pour ½ cup of chicken broth and add the sugared cranberries. Allow baking for 35-40 minutes at 425 degrees Fahrenheit. You can also decide to stop heating when the internal temperature of the chicken is 165 degrees Fahrenheit.
