- 3 cups of apricot, dried
- 3 cups of coconut, shredded
- 1-2 tablespoons of your preferred granular sweetener
Directions Apricot Coconut Bites
- Combine the dried apricots and coconut shred in a high-speed blender or food processor and mix until a dough forms.
- Form the mixture with your hands into balls or push it into a loaf pan and secure it.
- Refrigerate the balls or bits for 30 minutes to firm up.
- Roll them in shredded coconut or your preferred granulated sweetener.
