The acid is usually coated in palm oil, so, as it dissolves in the mouth, it creates a “slow-burn” effect that releases the acidity slowly, prolonging the experience. 

The most satisfying way to deliver the sharp sensation sour lovers crave is to load it onto the surface of the candy. The infamous sand coating on the outside of so many sour gummies is basically a form of acid or acid blend. The combination can include different acids, including tartaric, lactic, and fumaric acid, as well as citric and malic acid. Having a concentrated amount of the key ingredient on the candy’s surface is what provides that immediate flavor rush the moment you bite into the candy.
