Ingredients Cherry Loaf Cake

  • Toasted flaked almonds (2 tbsp)
  • Milk (1-2 tbsp)
  • Almond extract (one drop)
  • Icing sugar (100g)
  • Baking powder (½ tsp)
  • Ground almonds (50g)
  • Self-raising flour (175g)
  • Glacé cherries (75g)
  • Almond extract (1 tsp)
  • Vanilla extract (2 tsp)
  • Eggs (4)
  • Golden caster sugar (200g)
  • Soft unsalted butter (200g) (and extra for tin)

Method Cherry Loaf Cake

Preheat the oven and put butter on a loaf tin. Use the butter to line the tin with baking parchment. Bring out the sugar and butter and put them in a bowl. Beat them until they become fluffy and pale. Next, put the egg one by one and beat them every time. Add the almond extract and vanilla next and beat.

Place the eggs, sugar, pinch of salt, baking powder, ground almonds, flour, and cherries into a bowl. Mix thoroughly, and using a spoon, put the mixture into the tin and smoothen the top.

Allow to bake for about 55 minutes and cool in the tin for about 10 minutes. Next, put them on a wire rack for complete cooling. Mix enough milk with the extract and icing sugar in a separate bowl to become thick but pourable. Scatter the mixture on the cake and serve after scattering the flaked almonds over the mixture.
