Ingredients Orange Vanilla Candied Cranberries

  • 1 bag of 12-ounce cranberries
  • 1.75 cups of water
  • 2 cups sugar 
  • 1 orange’s zest and juice, or about ½ cup fresh juice
  • Vanilla extract, 1 teaspoon
  • 1 complete cinnamon stick
  • 3 parts of granulated sugar and 1 part of clear sparkling sugar to make 1.5 to 2 cups of white sugar for coating.

  • Wash the cranberries. 
  • In a heat-safe bowl, put the cranberries.
  • A 2 qt stock pot should be filled with water, zest, juice, vanilla, sugar, and a cinnamon stick. Then, bring it to a boil.
  • Turn down the heat to medium-low or low, and simmer for 5–7 minutes.
  • Remove from heat and let the mixture cool for a short while. When the cranberries are added in the following step, the mixture should be heated but not boiling.
  • Overnight, cover the cranberries with the mixture and a cinnamon stick.
  • Drain the cranberry syrup and set it aside for later use by placing a colander over a bowl. 
  • Allow cranberries to sit for 30 to 60 minutes so they get slightly sticky.
  • 1.5 to 2 cups of white sugar should be poured onto a sheet pan, then gently and evenly coat with the sugar, and rolled about half of the cranberry mixture. 
  • Roll the remaining cranberries into as near to a single layer as you can before adding the remaining sugar and cranberries. (The important thing is to make sure there is enough airflow around each cranberry.)
  • Spread the sugar and cranberries outside to dry. This can require several hours. 
  • Finally, when the sugar has hardened into a crunchy shell around each cranberry, the cranberries are finished.
