What is white chocolate?

White chocolate just screams decadence. With a smooth, creamy, velvety mouthfeel, it’s no wonder so many people are obsessed with it. Not to mention, it’s super versatile. You can simply enjoy it as is or use it as an ingredient in many dessert recipes. But what exactly is white chocolate – and how is it made? Is white chocolate even “real chocolate?” Let’s find out!

Is white chocolate real chocolate? 

When we think of chocolate, we usually think of milk chocolate, dark chocolate, and white chocolate, which are definitely the most common types. But, although white chocolate is commonly referred to as chocolate, many say, technically, it can’t be considered as such. 

You may have heard that is the case because white doesn’t contain chocolate solids. But according to the technical definition, white chocolate most certainly qualifies as “real chocolate”. This myth has been proved false on many accounts by several legit confection shops. There are a number of standards for white chocolate as there are with milk and dark chocolates. In fact, the FDA states all real white chocolate must contain at least 20 percent cocoa butter. Having said that, there are many companies that produce chocolate-like products that are not actually chocolate. 

What is white chocolate made from? 

Basically, chocolate is made from the pods of the cacao tree. Post harvest, the beans are removed from the pods and left out to ferment before being dried and roasted. What’s left is called the cacao nib, which is the base element of all things chocolate. 

The cacao nibs are ground into a paste called chocolate liquor, that eventually gets separated into two different products: cocoa solids and cocoa butter. The solids, which are brown in color, are used in the confection of dark and milk chocolate. Cocoa butter, on the other hand, is pale and creamy, and just pure fat. That is what is used to make white chocolate. 

How is white chocolate made? 

The process of making white chocolate varies, but the blend usually includes a mixture of cocoa butter, sugar, milk products, vanilla, and lecithin – a fatty acid used as an emulsifier. According to the Food and Drug Administration, white chocolate must contain a minimum of 20% cocoa butter and 14% milk solids by weight and may not consist of more than 55 percent sugar or any other sweeteners. 

The first white chocolate bar 

Dark and milk chocolate bars have been around since 1847, but white chocolate didn’t make an appearance for almost another century. The story goes that the first white chocolate bar was created by Nestlé in 1936. 

Allegedly, the candy giant invented white chocolate as a way to use up any surplus of milk powder that had been made for soldiers during World War I. After that creation, many other brands started to produce their own white chocolate bars.
